Sodium nitrate NaNO3 (and its cousin additive sodium nitrite NaNO2) is a common preservative used to cure meat products including bacon, deli meat, sausage and jerky. It has been linked to the development of heart disease, diabetes, cancer and other diseases. The nitrate form can convert into the nitrite which has more toxicity.
Potassium nitrate (saltpeter) acts very much like sodium nitrate (Chile saltpeter.) They both can be used to make explosives (e.g. gunpowder) or for fertilizer or other industrial applications.
Bat guano contains a high amount of potassium nitrate.
Plants typically contain a fair amount of potassium and when composted a “potassium nitrate salt” will form. In days of old, bat guano or a compost method was often used to obtain saltpeter for gunpowder (75% saltpeter, 15% charcoal, 10% sulfur.)
Nitrates/nitrites are a real problem in the drinking water overall.
In highly fertilized areas like Iowa, “blue baby syndrome” will occur with human babies and with some new-born animals. “Blue baby syndrome” happens where an infant’s blood cannot carry enough oxygen and thus their skin turns blue-gray. Their gut can’t yet process the nitrate/nitrite. Typically, every Spring there is an uptick in infant deaths for those regions with high nitrate levels.
ANECDOTE
During my Junior High School years, I wanted to make some gunpowder. I had charcoal and sulfur, but no saltpeter. I rode my bike to the small-town pharmacy and asked the pharmacist for some saltpeter. He told me that only my Father could buy it.
So, at home one day I said to my Dad, ”Dad, I ran out of something in my chemistry set. The pharmacists said that only you could buy it. Would you mind getting it for me?”
He was actually glad that I had such an interest in chemistry and promptly drove us both to the pharmacy. There he purchased the saltpeter container with my money. He had no clue was I was up to.
Weeks went by as I perfected my gunpowder mix and I was going to start with a big rocket. The whole neighborhood was very quiet that Sunday afternoon – the football game was on. On our driveway, I lit the fuse to my ‘rocket’ but it fell onto the fuse area. Then BOOM! It could be heard for I don’t know how far.
